CAPE HERB & INSTANT POT - CHIPOTLE, HONEY & LIME WINGS

Cape Herb & Spice teams up with Instant Pot to bring you this delicious Chipotle, Honey & Lime Wings.

- WHAT YOU WILL NEED -
- FOR THE WINGS
- FOR THE SAUCE
- 700g chicken wings
- 2 Tbsp honey
- 2 tsp Cape Herb & Spice CHIPOTLE CHILLI
- 1 Lime
- 1 1/2 tsp baking powder
- 1 tsp Cape Herb & Spice CHIPOTLE CHILLI
- 1/2 tsp salt
- fresh coriander for garnish (optional)
- 1 Spring Onion, thinly sliced for garnish (optional)
- METHOD -
Start off by preparing the chicken wings. Cut the wingtip from the wings and cut the wing in half at the joint to create 2 winglets. Repeat this with all the wings. Then toss the wings with Cape Herb & Spice Chipotle Seasoning, baking powder, and salt.
The wings can be cooked now, but for optimal extra crispy results, place the wings on a cooling rack over a baking sheet, and place them uncovered in the fridge for 8 hours - 24 hours, to dry out.
Once ready to cook preheat the instant vortex to 202C, for 25 minutes on air fry. Place the wings in an even layer in the fryer basket, then cook until golden and crisp, shaking halfway through.
While the wings cook, make the chipotle, honey, and lime glaze. Add the spices, honey, zest of 1 lime, and juice of ½ the lime to a bowl. Mix the ingredients, then microwave for 30 seconds on high.
Once the wings are cooked, toss them with the chipotle honey and lime glaze. Plate up the wings, scatter over the garnishes if using, and add wedges of fresh lime.
