CHICKEN PARMESAN PASTA
Life is about exploring pasta-bilities. And this chicken-Parmesan combo is what dreams are made of.
- WHAT YOU WILL NEED -
- 4 Tbsp olive oil
- 3 boneless chicken breasts
- 2 Tbsp Cape Herb & Spice MEDITERRANEAN ROAST
- 1 tsp Cape Herb & Spice SMOKED PAPRIKA
- 1 onion, minced
- 3 cloves garlic, minced
- 300 g spaghetti, cooked according to packet instructions
- 1 cup fresh cream
- 1/2 cup chicken stock
- 1/2 cup parmesan cheese
- salt and pepper, to taste
- 1 tsp dried Italian seasoning
- fresh Basil, to garnish
- METHOD -
Start of by spicing the chicken breast with Cape Herb & Spice Mediterranean Roast Rub and Cape Herb & Spice Smoked Paprika. Season with salt and pepper as well as some Italian seasoning.
Then in a large skillet, heat olive oil on medium heat and brown the chicken in the hot oil until almost cooked through. Remove it from the heat and place it plate.
In the same skillet, add onion and garlic and sauté for 2-3 minutes until soft. Pour in the fresh cream and stock. Bring to a boil, then reduce to a strong simmer.
Add chicken back to the pot and simmer for another 10 minutes. Then add in the spaghetti and stir in the Parmesan cheese.
Cook this for another 5 minutes until cheese is melted, then garnish with basil and enjoy.
