CHOPPED, SEEDED ARABIC SALAD

Colour, flavour and fresh ingredients personified make this easy, peasy side dish a treat to inspire a Moroccan feast or jazz up a meaty main. - WHAT YOU WILL NEED -

  • 1 tin chickpeas, drained & rinsed
  • 2 Tbsp Tastebud SEEDED
  • 1 cup cherry tomatoes, chopped
  • ½ cup red onion, diced
  • ½ cup coriander, roughly chopped
  • ½ cup mint, roughly chopped
  • 1 Tbsp lemon juice
  • FOR SERVING ~ pomegranate rubies
  • Olive oil

- METHOD -

Preheat the oven to 180˚C to get you going. Drizzle the chickpeas with a little olive oil and season with the our new Cape Herb & Spice SEEDED Tastebud spice blend. Toss to coat well and roast the chickpeas for 20 minutes, giving you time to prepare the vegetables and herbs. Toss the cucumber, onion, tomatoes, mint and coriander in a bowl. and mix well. Then, add in the roasted chickpeas, fresh lemon juice and an extra tablespoon of our star seasoning. Toss to combine and serve with a sprinkling of fresh pomegranate rubies and extra lemon wedges.
