CHRISTMAS LEFTOVERS 2 OF 3: TURKEY, BRIE & CRANBERRY BAGUETTE PIZZAS

Loads of leftover turkey, thick slices of ripe brie, a dollop of cranberry jelly and under the grill they go. You could call this seriously grand toasted cheese. Or you could be really fancy and call it baguette pizza! Either way, top it with peppery watercress or rocket and tuck in.

- WHAT YOU WILL NEED -

  • baguette bread (day-old is good)
  • 1 clove garlic
  • olive oil
  • tomato paste
  • left-over roast chicken (or turkey)
  • shop-bought cranberry jelly
  • grated mozzarella
  • brie cheese, sliced
  • Cape Herb & Spice SWEET & STICKY CHICKEN

- METHOD -

Turn your oven’s grill on. Slice baguette in half lengthwise. Drizzle baguette halves lightly with olive oil, pop onto a baking tray and place under the grill to toast. Remove and rub baguette halves with garlic, then spread a teaspoon of tomato paste on each half. Top with mozzarella, turkey and brie. Dust with Cape Herb & Spice's Sweet & Sticky Chicken Seasoning and top with dollops of cranberry jelly. Place under the hot grill until just melted. Top with watercress and serve right away.
