GRILLED PEACH AND GAMMON SALAD

Make sure your meals are easy and hassle-free this festive season. Grab your pre-cooked gammon and enjoy this delicious salad with the whole family.

- WHAT YOU WILL NEED -

  • 250g ready to eat smoked gammon
  • 4 firm, but ripe, dessert peaches
  • Cape Herb & Spice SUMAC
  • Extra-virgin olive oil
  • ±180g mixed lettuce leaves, washed
  • 50g toasted pecan nuts, roughly chopped
  • FOR THE VINAIGRETTE:

  • 1 Tbsp finely diced shallot
  • 1 Tbsp Dijon mustard
  • ¼ tsp Cape Herb & Spice SUMAC
  • ¼ cup extra-virgin olive oil
  • 2 Tbsp apple cider vinegar
  • Cape Herb & Spice salt, to taste
  • Crusty bread, for serving

- METHOD -

Start off by washing the peaches, pitting them and then slice each one into 6. Then toss them with the olive oil, a generous sprinkle of Cape Herb & Spice Sumac Seasoning and a small pinch of salt.

Next, heat a griddle pan on medium high heat and place the peach slices on the hot grill and cook each side for 2-3 minutes without moving them. Once grilled, set aside and allow to cool.

Then slice the gammon into manageable pieces and then slice as thinly as possible.

Combine all the vinaigrette ingredients in a small bowl and whisk until emulsified and creamy.

Then arrange the lettuce on a large platter or serving bowl and assemble the salad by placing folded slices of gammon all over the salad.

Top with grilled peaches, a sprinkle of pecan nuts, and a few pinches of salt.

Drizzle with dressing just before serving and enjoy.
