SALMON & AVO POKÉ BOWL

Nothing but nothing beats the wonderfully velvety buttery richness of raw salmon. Contrast it with loads of crunchy veg and sticky sushi rice and you have yourself the perfect poké bowl!

- WHAT YOU WILL NEED -

  • FOR THE DRESSING
  • FOR THE BOWL
  • 4 Tbsp Japanese mayonnaise or ordinary creamy mayonnaise (not tangy mayonnaise)
  • 6 large radishes, finely sliced
  • small punnet of edamame beans
  • 2 Tbsp fresh lemon juice
  • small punnet of mung bean sprouts
  • 2 tsp Cape Herb & Spice Poké Spice
  • one avocado
  • FOR THE SALMON
  • juice of half a lime
  • 250g sashimi-quality raw salmon
  • one spring onion, finely sliced
  • 1 Tbsp dark soy sauce
  • 1½ cups cooked sushi rice
  • 1 tsp sesame oil
  • 4 sprigs of coriander
  • juice of half a lime
  • 2 Tbsp pickled ginger

- METHOD -

Whisk together the dressing ingredients and set aside.

Slice the salmon into bite-sized blocks. Drizzle over sesame oil, soy sauce, lime juice and poké spice and toss to coat.

Slice the avocado into bite-sized blocks and drizzle over lime juice to prevent it from discolouring. Divide the veggies and sushi rice between two bowls. Add the salmon. Serve with the dressing on the side.
