MEDITERRANEAN CHICKEN TRAY BAKE

A super easy, one-tray dinner that is packed with Mediterannean flavour.

- WHAT YOU WILL NEED -

  • 3 Tbsp red wine vinegar
  • olive oil for drizzling
  • Cape Herb & Spice MEDITERRANEAN ROAST
  • 2 red onions, peeled and quartered
  • 300 g vine tomatoes or mixed baby tomatoes
  • a mix of 10 baby yellow and red peppers, halved and deseeded
  • 200 g pitted black olives
  • a head of garlic
  • ½ ciabatta loaf, torn into chunks
  • 8 pieces of chicken (thigh and legs)
  • 100 g feta, crumbled (optional) to serve

- METHOD -

Preheat the oven to 180 ºC.

Place all of the ingredients into a large baking tray. Drizzle with olive oil and red wine vinegar. Season generously with Cape Herb & Spice Mediterannean Roast Seasoning, then, using your hands, mix everything together to coat evenly in the spice, oil and vinegar. Nestle the chicken skin-side up in amongst the other ingredients and place the tray into the oven.

Bake for 40-45 minutes until the veggies are cooked and slightly charred and the chicken is golden. For extra colour you can grill for 5 minutes but keep an eye on it.

Finally remove the tray from the oven and sprinkle over the feta (if using) and serve.
